She currently heads the food and health divisions at Afnor Normalisation.
She has chaired several Afnor standardization committees focused on analytical methods.
Before joining Afnor, she worked as a consultant for the food industry.
Sandrine Espeillac is deeply involved in international activities. She has served as secretary for several ISO committees. She is the ISO delegation head in international intergovernmental organizations such as the Codex Alimentarius and the World Health Organization (WHO). She has also led international technical cooperation missions in Africa, South America, and Asia.
She is a member of the National Food Council (CNA) and teaches at various schools and universities: AgroParisTech, Jussieu, Institut Agro Dijon, and the University of Paris-Est Créteil.
She regularly serves as a speaker or moderator at numerous international conferences (workshops, One Health Summit, etc.) and French events (BIPEA, bioMérieux, Salon de l’Agriculture, National Assembly, Senate, etc.)

Formée en chimie moléculaire puis en chimie analytique et instrumentation à l’Université Paul Sabatier (Toulouse), mon parcours s’est progressivement orienté vers le développement d’outils analytiques au service de la qualité et de l’authenticité des aliments. Je réalise actuellement une thèse CIFRE au sein d’Aerial, qui s’achèvera lors de la conférence Food Risk, consacrée à la mise au point d’approches spectrales pour le contrôle de l’authenticité des ingrédients alimentaires, appliquées au cas du poivre noir (Piper nigrum).
Mes travaux explorent le potentiel et les limites de techniques telles que le MALDI-ToF, comparées à la RMN et à la spectroscopie FT NIR-MIR, afin de détecter et caractériser l’adultération du poivre noir à partir d’empreintes spectrales. Ils visent à évaluer la capacité de ces méthodes à discriminer des échantillons authentiques de produits adultérés, à identifier des marqueurs moléculaires pertinents et, plus largement, à proposer des solutions analytiques accessibles et adaptées au contrôle de routine.
À l’issue de cette thèse, j’occuperai le poste de chef de projet au sein du laboratoire de physico-chimie d’Aerial, avec pour objectif de poursuivre le développement et le déploiement de méthodes innovantes au service de la sécurité et de l’authenticité alimentaires.

Stéphane DEMARE, ingénieur papetier de formation, a acquis une grande expérience dans le domaine de l’emballage et plus particulièrement pour le contact alimentaire. Par ses fonctions, il a exercé pendant 18 ans des responsabilités d’expert dans le domaine de la conformité règlementaire des emballages et l’interaction contenant-contenu.
Fort de cette expérience et conscient de la nécessité de garantir aux producteurs et aux utilisateurs la conformité de leurs emballages, il a fondé en 2013 la société Légapack SAS afin d’accompagner les entreprises du secteur pour répondre aux exigences toujours plus nombreuses des règlementations et des consommateurs.

With a PhD in analytical chemistry and biotechnology and a degree in agricultural engineering, Mélina Ramos specialises in non-targeted approaches that enable the analysis of known compounds in a sample as well as the detection of unknown and/or unexpected compounds. She has worked in particular on interactions between biopesticides, the environment, vineyards and peach orchards, and on different types of tea. She is currently a data scientist in the authenticity R&D department at the Phytocontrol group, where she develops analytical methods to combat food fraud.

An analytical scientist, Stéphane Georgé worked for over 25 years at an agri-food technical center, where he participated in and led public-private research projects on the impact of processes on the quality of processed products. Today, he is head of R&D and innovation at the Phytocontrol group. He coordinates all projects involving the development or continuous improvement of analytical methods proposed by the group.

With a PhD in microbiology and molecular biology, Loïc Durand works at the interface between applied research, innovation and scientific management. He has over ten years’ experience in leading R&D projects and managing technical activities in regulated environments.
Since January 2026, he has been a Research & Development project manager in microbiology and biotechnology at the Phytocontrol laboratory, where he contributes to the development of innovative analytical solutions. He coordinates multidisciplinary projects related to health safety, quality and scientific performance issues.
Previously head of the health safety department, he managed three technical teams (20 employees), structured scientific activities and ensured the maintenance of COFRAC accreditations. His career also includes post-doctoral studies, a CIFRE thesis and scientific publications.
He is recognised for his leadership, methodological rigour and ability to bridge the gap between research, regulatory requirements and team management.

Since 2024, Illa Tea has been a professor at Lyon 1 University. She is also head of the ATOMIC team at the Institute of Analytical Sciences (ISA), a unit affiliated with the CNRS.
His research focuses on isotope ratio mass spectrometry, with a strong emphasis on methodological developments. His research has applications in biomedicine, as well as in methods for authenticating and determining the origin of bioproducts.

Catherine Chapalain has spent most of her career in the agri-food sector, working for the collective and then as general manager of Nestlé France, where she was responsible for communications, public affairs, and CSR.
During her 14 years as Director General of the National Association of Food Industries, Catherine represented the sector before French and European public authorities and led strategic projects for the food industry. Her extensive knowledge of the agri-food sector, as well as her commitment and determination, were key to promoting and defending France’s leading industry.
At Nestlé France, Catherine defined and implemented external and internal influence and communication strategies. She also led CSR initiatives in conjunction with the group and brands, as well as crisis management and communication. Finally, she spearheaded major initiatives such as the repositioning of the Nestlé France Foundation on food insecurity, an initiative on cultural change to promote employee engagement, and the completion of a socio-economic impact study.
Since 2022, Catherine has also been a director of CITEO, the eco-organization for household packaging. As chair of the appointments and compensation committee, she has overseen the implementation of the new governance structure designed to provide the best possible support for the strategic challenges facing the household packaging sector, with a view to optimizing both environmental and economic performance.
Catherine is a graduate of the College of Europe in Bruges, holds a Master’s degree in European and International Law, and has completed executive training at ESCP. She has an international outlook, enriched by multicultural experiences and daily immersion in the English language.

Since 2020, as Technical Manager, I have been responsible for the technical aspects of our ISO 17025 accreditation, particularly the development of methods and the implementation of routine analyses under FLEX III accreditation (pesticides, antibiotics, and polar contaminants via mass spectrometry). And recently, I have been leading the Contaminants and Authenticity division at AB LABO.

De formation ingénieur agroalimentaire, Bernard Lignon travaille actuellement comme Chargé de mission Réglementation et Qualité au sein du SYNABIO (Syndicat des transformateurs bio en France) depuis 2019.
Ses principales responsabilités portent sur le suivi et le lobbying en matière de réglementation bio, ainsi que sur le conseil aux adhérents concernant les questions de qualité et de réglementation.
Il assure également l’animation de groupes de travail, la conception et l’animation de formations sur la réglementation bio, et participe activement aux instances IGOP et IFOAM Europe.

Il est actuellement directeur des méthodes de laboratoire et de la microbiologie de la coopérative SODIAAL, Paris, France.
François est délégué de la France auprès de la Fédération Internationale de Laiterie (FIL-IDF) depuis 2010. Il est membre des comités permanents : Science et technologies des procédés laitiers (SCDSPT), Hygiène alimentaire (SCFH, actuellement président élu), Résidus et contaminants chimiques (SCRCC), Méthodes et micro-organismes laitiers (SCMDM), Méthodes d’analyse des additifs et des contaminants (SCAMAC), Statistiques de laboratoire et assurance qualité (SCLSQA).
